The year was 2015 when we had moved to new city in the US. I was trying to find my footing and my thoughts were going haywire. Time went on and I realized that finding a good vegetarian burger or a pizza or eggless cookies was initially difficult in a new place. As it is said necessity is the mother of invention, I picked up an interest in eggless baking. The first thing I learnt to bake was nankhatai. I don't remember the reason why I decided on learning how to bake nankhatai first. This is my story of starting baking.
By the way, did you know that nankhatai originated from the Indian subcontinent and is popular in northern India. These cookies are believed to have originated in Surat in the 16th century.
